Wednesday Anything – This & That

I’m moving house this week so you won’t see much from me over the next week or so. Boo. I hate moving house. Especially since my husband and I nearly ended up divorced last time we moved. Apparently my patience wears very very very thin after hauling around 50 million boxes. 

Anyway, for this weeks Wednesday post I’m going to share a couple of different random things. The first thing is the new Outlander trailer. Sooooo looking forward to this tv series. It’s going to be EPIC. I just know it. Bring on August 9th!

The other amazing thing I have to share is this delicious recipe I tried last night. It seems to be lemon season here at the moment. Everyone and their neighbor has lemon trees laden with lemons. So last night, under a cloak of darkness, I crept over the fence and pinched some lemons from my neighbor. Then I made up the following recipe and while it’s quite intensely lemony, it’s completely delicious. Enjoy!

Lemony Lemon Brownies

Ingredients:

  • 3/4 cup all-purpose flour 
  • 3/4 cup granulated sugar
  • 1/4 teaspoon salt 
  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 large eggs
  • 2 tablespoons lemon zest
  • 2 tablespoons lemon juice

For the tart lemon glaze:

  • 4 tbsps lemon juice
  • 8 tsps lemon zest
  • 1 cup icing sugar

Directions:

  1.  Preheat the oven to 350 degrees.
  2. Grease an 8×8 inch baking dish with butter and set aside.
  3. Zest and juice two lemons and set aside.
  4. In the bowl of an electric mixture fitted with the paddle attachment, beat the flour, sugar, salt, and softened butter until combined.
  5. In a separate bowl, whisk together the eggs, lemon zest, and lemon juice until combined.
  6. Pour it into the flour mixture and beat for 2 mins at medium speed until smooth and creamy.
  7. Pour into baking dish and bake for 23-25 mins, should turn golden around the edges.
  8. Allow to cool completely before glazing. Do not overbake, or the bars will dry.
  9. Filter the powdered sugar and whisk with lemon zest and juice.
  10. Spread the glaze over the brownies with a rubber spatula and let glaze set.
  11. Cut into bars and serve.

Wednesday Anything – You HAVE to try this! Best Ever Chocolate Fudge Brownie

There has been a lot of talk about chocolate on our Twitter lately. Unsurprising really, since chocolate goes hand in hand with tea and reading. Well I think it does anyway! So today I thought I would share this amazing recipe with you. It is so freakin good. And it’s dark chocolate and nuts! So it’s healthy too. Ahem…

Best Ever Chocolate Fudge Brownies 

Ingredients
250g of good quality dark cooking chocolate, chopped
150g butter
1 cup brown sugar
3 eggs, lightly beaten
1 teaspoon vanilla essence 
1 cup of plain flour
125g macadamia nuts, roughly chopped

Method

1.    Melt butter and chocolate together over a double boiler or in the microwave on medium (50% power) for 2 minutes. Stir to help the mixture melt and make it smooth.

2.    Add the sugar and stir to dissolve any lumps. Add the eggs, vanilla and flour, and mix well. Fold in the nuts.

3.    Pour into a greased and lined 28 x 18 cm slab pan. Bake for 30 mins (slightly less for fan bake) at 180 degrees.

4.    Cool completely in the pan.

5.    Dust with icing sugar to serve.

A couple of things – if you’re allergic to nuts, or someone in your family is allergic to nuts, this is still completely delicious without any nuts. Just leave them out. Also the icing sugar dusting at the end is optional – I never do it because I think it tastes better without it.
And Ta-da! There you have it. Get cooking (and scoffing) and tell me how much you love it. I won’t judge – I have been known to eat a whole batch in a day…
