Wednesday Anything – Caramello Slice

I had a dilemma this week and completely forgot about my Wednesday post. The dilemma involved my lip, my toddlers head and (eventually) the doctor. I have been drinking through a straw since Tuesday! Even my cups of tea have been consumed via straw! Ridiculous. Anyway, I’m semi back to normal now and ready to roll. 

So the post for this week is food related (surprise!). You may have seen this recipe already as it seems to be doing the rounds on Facebook at the moment but I recently tried it and Oh! so good! Perfect with a cuppa and book. It’s also incredibly easy to make – only 4 ingredients. Warning – it’s quite intense and that’s without the chocolate topping. 

Caramello Slice


1 pack of Marie (plain) biscuits

1/2 tin of condensed milk

220g block of Cadbury (or any other brand) Caramello Chocolate

125g of butter


* Line a slice tray with baking paper.

* Crush the biscuits into small pieces – you can use a food processor, or just bash them with the end of a rolling pin.

* Melt the butter and chocolate together in microwave. 

* Add the melted butter & chocolate as well as the condensed milk to the crushed biscuits.  Mix together to combine and then pour into the slice tray.

* Using a metal spoon, spread slice evenly over the tray and push down to smooth.

* At this point I just chucked mine in the fridge for a bit to set but I have seen people melt a block of plain choc and spread it over the top or sprinkle coconut over the top. Both options sound delicious. Once set, slice into squares and enjoy!

So last week I finally had a reason to make a brownie recipe that I’ve had written down for literally years. But have never made. And HOLY MOLY I can still taste the goodness. So I’m sharing my recipe for my Sunday Loves this week. It’s the first episode of TB in a couple of sleeps so maybe you might want to cook this bad boy up and have it on hand juuuuust in case Eric doesn’t make an appearance… pretty sure that’s my/our plan!

Oh and btw this recipe does come with a warning: It is extremely extremely decadent. So when it says cut into small squares you literally want tiny small squares. I know this from experience since last week I decided to taste test the brownie before Kindy pickup… It wasn’t a good look me showing up with a chocolate hangover! Totally worth it though.


Choc Cheesecake Brownie!!!

150g butter, melted and slightly cooled

1/2 cup cocoa

3 eggs, room temperature

11/4 cups sugar

1 teaspoon vanilla essence

1/2 cup flour

3/4 teaspoon baking powder

1/2 cup dark chocolate chipes


250g cream cheese, softened

1 egg

1/4 cup sugar

1/2 teaspoon vanilla essence



  • Preheat the oven to 170C. Line an 18cmX28cm tin with baking paper.

  • To make the topping, beat the cream cheese, egg and sugar together until fluffy. Add the vanilla essence and beat again until combined. Set aside.

  • To make the brownie, pour the melted butter into a large bowl and sift over the cocoa. Whisk together until combined. Add the eggs, sugar and vanilla essence. Whisk vigorously for about 30 seconds until the mixture becomes creamy and slightly paler in colour.

  • Sift over the flour and baking powder. Use a spatula to combine gently. Fold in the chocolate chips.

  • Spoon half the brownie mixture into the base of the prepared tin, smoothing it out with the back of a spoon. Place dollops of the topping over the brownie, then fill in the gaps with the remaining brownie mixture.

  • Use the point of a knife or a chopstick to zigzag through the brownie and swirl the two mixtures together.

  • Bake for about 45 minutes until the brownie is pulling away from the sides of the pan and is not wobbly in the centre. Cool in the pan and cut into small squares to serve. KEEP REFRIGERATED.


Wednesday Anything – You HAVE to try this! Best Ever Chocolate Fudge Brownie

There has been a lot of talk about chocolate on our Twitter lately. Unsurprising really, since chocolate goes hand in hand with tea and reading. Well I think it does anyway! So today I thought I would share this amazing recipe with you. It is so freakin good. And it’s dark chocolate and nuts! So it’s healthy too. Ahem…

Best Ever Chocolate Fudge Brownies 

250g of good quality dark cooking chocolate, chopped
150g butter
1 cup brown sugar
3 eggs, lightly beaten
1 teaspoon vanilla essence 
1 cup of plain flour
125g macadamia nuts, roughly chopped


1.    Melt butter and chocolate together over a double boiler or in the microwave on medium (50% power) for 2 minutes. Stir to help the mixture melt and make it smooth.

2.    Add the sugar and stir to dissolve any lumps. Add the eggs, vanilla and flour, and mix well. Fold in the nuts.

3.    Pour into a greased and lined 28 x 18 cm slab pan. Bake for 30 mins (slightly less for fan bake) at 180 degrees.

4.    Cool completely in the pan.

5.    Dust with icing sugar to serve.

A couple of things – if you’re allergic to nuts, or someone in your family is allergic to nuts, this is still completely delicious without any nuts. Just leave them out. Also the icing sugar dusting at the end is optional – I never do it because I think it tastes better without it.
And Ta-da! There you have it. Get cooking (and scoffing) and tell me how much you love it. I won’t judge – I have been known to eat a whole batch in a day…
